Ingredients
Serves 4 —

2 lbs ripe cashew apples (fruit, not the nut)

4 cups water
•
1/2 cup sugar
•
1 pinch a pinch of salt
•
1 lime
Instructions

Squeeze and press the cashew apples to extract their juice, discarding the attached nuts (which need separate roasting).

Stir a pinch of salt into the raw juice and let it sit 10 minutes to tame the astringency, then strain.

Dilute with the water and sweeten with sugar, brightening with lime juice.

Chill well and serve cold over ice.
