Togo
Africa · This week's dish comes from Lomé
About Togo
Togolese food is West African at heart, pâte (corn or cassava dough) with okra or spinach sauces, grilled fish, and fufu. Palm oil, chili, and groundnut define a small nation's flavorful table.
Gboma is the leaf of Solanum macrocarpon, the African eggplant, and spinach is a working substitute rather than the same plant; the stew made from it, gboma dessi, is Ghana's and Benin's shoko under another name. The dough beside it is akoume, also called to, the same word used for the millet and sorghum staples further north in the Sahel.
Togo is a narrow strip running from the Atlantic to the Sahel, and its food changes as you go up it. The coast has fish, coconut and cassava; the middle has yam and maize; the dry north turns to millet, sorghum and shea butter, and the same household dish shifts its starch accordingly rather than its logic.
The wider picture: Fifty-four countries of tagines, stews, and fire-kissed grills.
This week's dish: Galidossi (Gari and Milk Dessert)
Crunchy cassava gari soaked in cold sweet milk with roasted peanuts, a refreshing Togolese street dessert.
