Switzerland
Europe · This week's dish comes from Bern
About Switzerland
Switzerland melts its way to fame with fondue and raclette, alongside crispy rösti potatoes and superb Alpine cheeses and chocolate. French, German, and Italian regions each shape a distinct, dairy-rich cuisine.
Fondue's status as the national dish is younger and more deliberate than it looks: the Swiss Cheese Union promoted it hard from the 1930s onward, at a time when the country wanted a shared symbol and a use for surplus cheese. That does not make it less good, but it does mean an alpine-peasant origin story should not be assumed.
Rosti belongs to the German-speaking side, so firmly that the cultural line between German and French Switzerland is called the Roestigraben, the rosti ditch. Raclette is both a cheese and a meal, the wheel melted at the cut face and scraped onto potatoes with pickled onions and gherkins beside them.

Discussion prompts
1. Find Switzerland on a world map or globe. It sits in Europe. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Rösti comes from Bern, in Switzerland. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Rösti. How have the people, trade routes, and history of Switzerland shaped what ends up on the plate there?
4. Compare Rösti to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Switzerland about how they make and share it?
5. After you cook Rösti, add Switzerland to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
