Pakistan
Asia · This week's dish comes from Lahore (Punjab)
About Pakistan
Pakistani cuisine is rich, meat-forward, and boldly spiced, from slow-cooked nihari and karahi to fragrant biryanis and tandoor breads. Punjabi, Sindhi, and Mughal traditions meet over ghee, yogurt, and generous garam masala.
Nihari is a night-long stew, its name taken from the Arabic for day because it was eaten at dawn after cooking overnight, and it is still a breakfast dish in Lahore and Karachi rather than a dinner one. The pot is often never fully emptied, a little of yesterday's held back as the starter for today's.
Partition rewrote Pakistani menus. Muhajir families arriving from northern India after 1947 brought their own biryani, which is why Karachi's version is its own thing, heavier on potato, tomato and sourness than the Sindhi or Lahori styles. The tandoor remains a neighbourhood facility as much as a kitchen fixture, with dough carried to it and bread carried back.
The wider picture: From street-cart woks to slow monastery kitchens.
This week's dish: Lahori Chicken Karahi
Chicken flash-cooked in a wok-like karahi with tomatoes, ginger, and black pepper, no onions, no shortcuts.

Discussion prompts
1. Find Pakistan on a world map or globe. It sits in Asia. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Lahori Chicken Karahi comes from Lahore (Punjab), in Pakistan. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Lahori Chicken Karahi. How have the people, trade routes, and history of Pakistan shaped what ends up on the plate there?
4. Compare Lahori Chicken Karahi to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Pakistan about how they make and share it?
5. After you cook Lahori Chicken Karahi, add Pakistan to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
