Norway

Europe · This week's dish comes from Vestland (Bergen)

About Norway

Norway's cuisine is shaped by cold seas and long winters, salmon, cod, and shrimp alongside preserved fish, brown cheese, and hearty root vegetables. Fresh seafood and a tradition of preserving define the Nordic coast.
Brunost is not cheese in the ordinary sense: it is whey boiled down for hours until the milk sugars caramelise into a firm brown block, sweet and faintly fudgy, shaved in thin curls onto bread with a slicer designed for the job. It is a preserving trick that turned a by-product into a national habit.
Norway dries its cod two different ways and the difference matters. Torrfisk is hung on wooden racks in the cold Lofoten air with no salt at all, a trade that has run for centuries; klippfisk is salted first and then dried. Lutefisk is dried fish brought back with lye. The salmon on modern menus, by contrast, is overwhelmingly farmed.
The wider picture: Village recipes guarded for generations.
