About North Macedonia
North Macedonian cooking is Balkan and garden-driven, ajvar pepper relish, tavče gravče baked beans, and grilled meats. Peppers, beans, dairy, and Ottoman-rooted pastries define a warm, rustic table.
Tavce gravce is named for its pot. Dried beans are cooked with onion, paprika and dried peppers, then baked in an unglazed earthenware dish that goes to the table, and the crust that forms on top is the point of the exercise. The Tetovo style is the best-known variation, and the dish is regularly called the national one.
Ajvar season is a household event: peppers bought by the sack in autumn, roasted in the yard, peeled hot, minced and simmered down with oil for hours, then jarred to last the winter. In the Ohrid and Prespa regions, the layered pan-baked bread that Kosovo calls flija is made here as gjomleze, cooked in stages over a low fire.

Discussion prompts
1. Find North Macedonia on a world map or globe. It sits in Europe. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Ravanija comes from Skopje, in North Macedonia. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Ravanija. How have the people, trade routes, and history of North Macedonia shaped what ends up on the plate there?
4. Compare Ravanija to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in North Macedonia about how they make and share it?
5. After you cook Ravanija, add North Macedonia to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
