Micronesia
Oceania · This week's dish comes from Palikir
About Micronesia
The Federated States of Micronesia cook close to the reef, fresh fish, taro, breadfruit, and coconut, often in an earth oven. Island root crops and the surrounding Pacific define the table.
The Federated States are four states and they do not cook alike. Yap, Chuuk, Pohnpei and Kosrae differ in staples and in ceremony, so treating Micronesia as one kitchen misses the point. On Pohnpei, yams are grown competitively and a prize tuber is measured by the number of men needed to carry it.
Sakau is Pohnpei's kava, pounded on a flat basalt stone with a rhythm that carries across a village and strained through the inner bark of hibiscus into a coconut shell. It is drunk in a nahs, a community house, and the order in which cups are passed follows title and rank rather than who arrived first.

This week's dish: Uht Sukusuk (Pounded Banana with Coconut Cream)
A Pohnpeian sweet of ripe bananas boiled and pounded to a smooth, sticky mass, crowned with a pour of fresh coconut cream.
