Malawi

Africa · This week's dish comes from Lilongwe

About Malawi

Malawi, the 'warm heart of Africa,' eats nsima (maize porridge) with relishes of greens, beans, and the tiny lake fish chambo and usipa. Fresh from Lake Malawi, its table is simple and communal.
Two lake fish, not one. Chambo is a group of Lake Malawi tilapia and a substantial fish, grilled or fried whole; usipa is the small silvery one, dried by the sackful and fried crisp or simmered into a relish. Chambo stocks are under real pressure from overfishing, so the fish is not as freely available as its reputation suggests.
Ndiwo is the word for the relish, and it does the work of making nsima into a meal: pumpkin leaves or cassava leaves pounded and cooked with groundnut flour, or beans, or fish. Nsima is turned with a wooden spoon until it is stiff enough to hold a thumbprint, and a piece is used to scoop.

Discussion prompts

1. Find Malawi on a world map or globe. It sits in Africa. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Mgaiwa Phala comes from Lilongwe, in Malawi. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Mgaiwa Phala. How have the people, trade routes, and history of Malawi shaped what ends up on the plate there?
4. Compare Mgaiwa Phala to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Malawi about how they make and share it?
5. After you cook Mgaiwa Phala, add Malawi to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
