Liechtenstein

Europe · This week's dish comes from Vaduz

About Liechtenstein

Liechtenstein's tiny Alpine cuisine mirrors its Swiss and Austrian neighbors, cheese-laden käsknöpfle dumplings, hearty soups, and rich dairy. Simple, mountain-shaped comfort food defines the table.
Kasknopfle is served with roasted onions and apple sauce, and the apple sauce is the part outsiders leave off and locals do not: soft dumplings and melted mountain cheese need something sharp beside them. Liechtenstein's own tourism office calls it probably the country's most famous specialty.
It belongs to the Alpine Rhine valley rather than to one principality, appearing as Kasknopfle in Vorarlberg over the Austrian border and as chasechnopfli in Switzerland. The principality is small enough that its food is genuinely regional rather than national, which is an honest thing to say about a country of forty thousand people.

Discussion prompts

1. Find Liechtenstein on a world map or globe. It sits in Europe. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Apfelchüechli comes from Vaduz, in Liechtenstein. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Apfelchüechli. How have the people, trade routes, and history of Liechtenstein shaped what ends up on the plate there?
4. Compare Apfelchüechli to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Liechtenstein about how they make and share it?
5. After you cook Apfelchüechli, add Liechtenstein to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
