About Kuwait
Kuwaiti cuisine centers on machboos, spiced rice with meat or fish, and reflects Gulf trade with India and Persia. Dried lime (loomi), cardamom, and the ritual of dates and coffee define the table.
The Kuwaiti signature within the machboos family is the prawn version, machboos rubyan, because Gulf shrimp were landed here in quantity long before oil. The dried black lime is pricked with a fork before it goes into the pot so its sourness can leach out, and bzar, the local spice blend, does the rest.
Harees is the Ramadan dish, wheat and meat cooked down and beaten until they become one texture, and it appears across the Gulf rather than in Kuwait alone. Before oil, this was a pearling and trading port whose boats ran to India and East Africa, and the cardamom, saffron, rice and dried lime in the pantry all arrived that way.

This week's dish: Gers Ogaily
A fragrant saffron and cardamom sponge cake topped with sesame and nigella seeds, a Kuwaiti celebration classic.

Discussion prompts
1. Find Kuwait on a world map or globe. It sits in Asia. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Gers Ogaily comes from Kuwait City, in Kuwait. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Gers Ogaily. How have the people, trade routes, and history of Kuwait shaped what ends up on the plate there?
4. Compare Gers Ogaily to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Kuwait about how they make and share it?
5. After you cook Gers Ogaily, add Kuwait to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
