Kiribati

Oceania · This week's dish comes from Tarawa

About Kiribati

Kiribati's atoll cuisine is defined by the coconut and the sea, reef fish, giant swamp taro (babai), and coconut toddy. On these low coral islands, the palm and the ocean are the whole pantry.
Babai is a long-term investment. Giant swamp taro is grown in pits dug down to the freshwater lens under the coral, and a prestige tuber may be tended for up to ten years before it is cut for a feast. The corms need hours of cooking to bring down their acridity, which is part of why the crop carries the status it does.
Karewe, the toddy tapped from the cut coconut spathe, is drunk fresh and sweet or left to ferment, and it is boiled down into a syrup that keeps. The pits that grow babai are threatened by saltwater intrusion as sea level rises, which is a plain fact about these atolls rather than a metaphor.
