🌍 Country of the Week · A Spin the Globe Teacher's Guide
Kenya
Africa · This week's dish comes from Nairobi
About Kenya
Kenyan food centers on ugali (maize-meal staple) paired with sukuma wiki greens and nyama choma grilled meat. Swahili-coast dishes bring coconut, spice, and Indian influence to a warm, communal table.
Sukuma wiki means push the week, which is exactly what the dish is for: collard greens chopped fine and fried with onion and tomato to stretch a household's food to payday. Nyama choma is the counterweight, goat as often as beef, roasted slowly over coals and eaten standing up over an afternoon rather than plated as a meal.
The coast cooks nothing like the interior. Swahili towns have been trading across the Indian Ocean for a thousand years, and their repertoire is a coconut and spice one: pilau, biryani, wali wa nazi, which is rice cooked in coconut milk, and mahamri, the cardamom doughnut eaten at breakfast.
The wider picture: Fifty-four countries of tagines, stews, and fire-kissed grills.
This week's dish: Uji
A smooth, slightly sour fermented millet-and-sorghum porridge, sipped warm to start the day.

Discussion prompts
1. Find Kenya on a world map or globe. It sits in Africa. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Uji comes from Nairobi, in Kenya. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Uji. How have the people, trade routes, and history of Kenya shaped what ends up on the plate there?
4. Compare Uji to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Kenya about how they make and share it?
5. After you cook Uji, add Kenya to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
