Czechia
Europe · This week's dish comes from Bohemia
About Czechia
Czech cooking is built for its beer, all roast pork, bread dumplings, sauerkraut, and rich gravies. Hearty, Central European, and unapologetically comforting, it centers the pub and the Sunday table.
The plate has a name of its own: vepro-knedlo-zelo, roast pork with bread dumplings and cabbage, said in one breath. The other national dish is svickova, beef under a sieved sauce of root vegetables and cream, served with cranberry and a spoonful of whipped cream, which sounds wrong and is not.
Czech beer is documented rather than merely famous. The pale lager the whole world now drinks was first brewed in Plzen in 1842, and the pub remains the room where the food makes sense, which is why so much of the cooking is salty, fatty and built to be eaten slowly next to a glass.
