Chile

South America · This week's dish comes from Central Valley

About Chile

Chile's long coastline delivers extraordinary seafood, from ceviche to hearty fish stews, while its central valley yields corn, beans, and wine. Pastel de choclo and empanadas anchor a comforting, produce-rich table.
Pastel de choclo has no pastry: a meat and onion filling under a lid of ground fresh corn, sugar sprinkled on top and browned in the oven, served in the clay dish it was baked in. Ceviche is eaten here too but it is shared with and argued over against Peru, so nobody on this coast gets to claim it outright.
Two southern specifics carry the country. Curanto on Chiloe is a pit of fire-heated stones layered with shellfish, meat and potato dumplings, covered with nalca leaves and turf and left to steam like a buried pressure cooker; its name comes from the Mapudungun for stony. Merken is the Mapuche condiment, cacho de cabra chillies sun-dried, wood-smoked and ground with toasted coriander seed and salt.
The wider picture: Andes, Amazon, and Atlantic all on one plate.

Discussion prompts

1. Find Chile on a world map or globe. It sits in South America. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Completo comes from Central Valley, in Chile. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Completo. How have the people, trade routes, and history of Chile shaped what ends up on the plate there?
4. Compare Completo to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Chile about how they make and share it?
5. After you cook Completo, add Chile to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
