🌍 Country of the Week · A Spin the Globe Teacher's Guide
Canada
North America · This week's dish comes from Québec
About Canada
Canada's food reflects its vast geography and immigrant makeup, Québécois poutine and tourtière, Atlantic seafood, prairie grains, and Indigenous game and berries. Maple syrup remains its sweet national signature.
Quebec produced about seventy-two per cent of the world's maple syrup in 2024, and the province's producers run a strategic reserve, storing syrup in good years to steady prices and supply in bad ones. Sap runs only when nights freeze and days thaw, which makes the season a few weeks long and different every year.
Poutine's origin is contested between rural Quebec towns rather than settled, with Warwick and Drummondville both claiming it in the late 1950s and the province-wide story never resolved. What is not in question is the construction: fresh cheese curds that squeak, hot gravy poured over to soften but not melt them, and chips underneath.
The wider picture: A collision of Indigenous, colonial, and immigrant tables.
