Bhutan

Asia · This week's dish comes from Thimphu

About Bhutan

Bhutanese cuisine is fiercely chili-loving, and its national dish, ema datshi, is simply chilies stewed in cheese. Red rice, buckwheat, and yak dairy sustain life in the high Himalayas.
Datshi means the cheese, a soft fresh cow or yak cheese that melts into a sauce rather than stringing, and the chillies come in three states: green and fresh in season, sun-dried red for the rest of the year, and dried white after boiling. They are treated as the vegetable in the dish, not the seasoning on it.
Nothing chilli-based in Bhutan is ancient, since the chilli itself is a post-Columbian arrival in the Himalaya. What is old is the grain: red rice grown in terraced paddies at altitude, buckwheat in the high valleys of Bumthang made into pancakes and noodles, and butter and cheese from yaks that graze above where rice will grow.
The wider picture: From street-cart woks to slow monastery kitchens.

Discussion prompts

1. Find Bhutan on a world map or globe. It sits in Asia. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Khur-le comes from Thimphu, in Bhutan. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Khur-le. How have the people, trade routes, and history of Bhutan shaped what ends up on the plate there?
4. Compare Khur-le to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Bhutan about how they make and share it?
5. After you cook Khur-le, add Bhutan to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
