🌍 Country of the Week · A Spin the Globe Teacher's Guide
Belize
North America · This week's dish comes from Belize City
About Belize
Belize blends Caribbean, Maya, and Mestizo flavors, rice and beans cooked in coconut milk, stew chicken with recado, and fry jacks for breakfast. English-speaking and coastal, it leans on seafood and tropical produce.
Belizeans distinguish rice and beans from beans and rice and mean two different things. Rice and beans is the two cooked together in coconut milk and is the national dish; beans and rice is them cooked separately and served side by side. Recado rojo, the brick-red annatto paste with Maya roots, is what colours and seasons the stew chicken.
Belize is the only English-speaking country in Central America, and its kitchens sit side by side rather than blending: Creole coconut rice, Maya corn and recado in the west, Mestizo escabeche and salbutes in the north, and Garifuna hudut in the coastal towns of Dangriga and Hopkins, fish in coconut broth with pounded plantain.
The wider picture: A collision of Indigenous, colonial, and immigrant tables.
