Argentina

South America · This week's dish comes from Mendoza

About Argentina

Argentina lives for the asado, the ritual slow grill of grass-fed beef served with chimichurri, a legacy of the pampas and Italian and Spanish immigration. Empanadas, mate, and dulce de leche round out a meat-loving, sociable food culture.
Dulce de leche's origin is disputed between Argentina and Uruguay, with a French confiture de lait documented earlier than either national legend, so it is best described as a shared and argued-over sweet. Mate is shared too, drunk across Uruguay, Paraguay and southern Brazil, and passed round one gourd and one metal straw at a time.
Empanadas are provincial before they are national. Salta's are small, juicy and often baked in a clay oven; Tucuman's are cut differently again; and the crimp along the edge, the repulgue, is read as a signature of what is inside. The rest of the Italian legacy is worth naming too, in the thick-crusted Buenos Aires pizza and the milanesa.
The wider picture: Andes, Amazon, and Atlantic all on one plate.

This week's dish: Tortas Fritas

Simple fried dough discs, crisp-edged and dusted with sugar, that Argentines make on rainy mornings to eat with mate.

Discussion prompts

1. Find Argentina on a world map or globe. It sits in South America. Which oceans or neighboring countries does it touch, and roughly how far is it from where you live?
2. Tortas Fritas comes from Mendoza, in Argentina. Read its ingredient list together. Which of those foods do you think are grown or raised nearby, and how might the country's climate and landscape explain that?
3. Read the short story behind Tortas Fritas. How have the people, trade routes, and history of Argentina shaped what ends up on the plate there?
4. Compare Tortas Fritas to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Argentina about how they make and share it?
5. After you cook Tortas Fritas, add Argentina to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
