🌍 Country of the Week · A Spin the Globe Teacher's Guide
Andorra
Europe · This week's dish comes from Andorra la Vella
About Andorra
Andorra's mountain cuisine draws on Catalan and French Pyrenean traditions, trinxat (cabbage and potato with pork), hearty stews, and grilled meats. Cured sausage, mushrooms, and Alpine cheese define the table.
Trinxat amb rosta is waste-free cooking made a virtue: winter cabbage and potato boiled, chopped together and fried in pork fat with bacon on top, using what survives frost at altitude. It is shared with the Alt Urgell and Cerdanya districts across the Catalan border, so it belongs to a mountain region rather than to a state.
Escudella is winter and festival food, tied to the January feasts of Sant Antoni and Sant Sebastia, a long-simmered pot of meat, vegetables and pasta served as broth first and solids after. Andorra la Vella is the highest capital in Europe, and the growing season is short enough that cured sausage, mountain cheese and foraged mushrooms fill the gap.
